Roasted Sourdough Sandwich

As far as bread is concerned sourdough is superior to the others! Mainly due to the fermenting process meaning the wheat is easier to digest. The fermentation process also improves its nutrition profile in several ways. For starters, it contains a good amount of minerals, including potassium, phosphate, magnesium and zinc. Eating foods that are lower in GI levels increase gut hormone production and take longer to digest so you get steady blood sugar levels and feel fuller for longer.

  • 2 slices sourdough bread
  • Roasted red pepper
  • Cherry tomatoes
  • Sliced avocado
  • 2 poached eggs

Optional toppings such as mushroom, pesto, cheese or avocado.


Step 1: Add two eggs to simmering water to poach them for around 3 1/2 minutes.

Step 2: Whilst the eggs are poaching, slice two generous inch thick slices of sourdough bread. Add a small amount of olive oil and sea salt.

Step 3: Line one slice with roasted red peppers, half sliced cherry tomatoes, sliced avocado and then top with the two poached eggs.

Step 3: Add a little sprinkle of black pepper and sea salt.

Step 4: Place the remaining slice on top and cut in half. Add a side of watercress and spinach and enjoy!
