Posh Chopped Salmon Salad

A fantastically fresh and flavoursome summer salad. Both vibrant and energising, this quick and easy salad recipe will clean your blood, and cleanse your liver. A quick and tasty recipe that’s ideal for those who want to be trim this summer and a perfect one to take to work as a weekday lunch.

  • 1 carrot
  • 1⁄4 bulb of fennel
  • a small handful of radishes
  • 1⁄2 Romaine lettuce or 1 little gem lettuces
  • 2 white endives or chicory
  • 70g smoked salmon
  • extra virgin olive oil
  • 1 lemon
  • sea salt and freshly ground black pepper
  • small bunch of fresh dill


1.) Get yourself a large chopping board and a large sharp knife.

2.) Start chopping the harder, crunchier veg first.

3.) Peel, trim and chop your carrot, fennel (plus its herby tops) and radishes. Bring it all into the centre of the board and continue chopping and mixing together.

4.) Add the lettuce and endive leaves and chop them up too. When everything is well chopped, you’ll have a big mound of salad on the board.

5.) Slice the salmon up into small pieces and mix in.

6.) Make a well in the middle and drizzle in 6 tablespoons of olive oil, 2 tablespoons of lemon juice and a good pinch of salt and pepper.

7.) Mix up so everything gets dressed, sprinkle with some chopped dill and serve straight from the board or in a bowl.
