Kids Chocolate Brownie Protein Pops

Ingredients

  • 1 cup (in total) of Walnuts, Almonds and/or Brazil nuts (ground)
  • 1 cup of Dates (unsweetened)
  • 1/2 cup of Dessicated Coconut
  • 5 tablespoons Cocoa Powder
  • 1 teaspoon of Vanilla Extract

Method

Firstly, my advice would be to get your little ones involved in the preparation. This will keep they preoccupied and build some helpful practical habits for them.

Preparation: Get your Nuts and pour them into a food processor. Grind the Nuts until they are a powder consistency. Next, blend the Dates until they are smooth. If you find they are sticking to the sides of the food processor, simply add a small amount of water until they reach the smooth consistency you are after.

Mix the Nuts and Dates together in a large bowl. Add most of your coconut leaving a little for the finishing touches. Now add 5 tablespoons of Cocoa Powder stirring as you do and finally add your Vanilla extract or vanilla pod. Mix well.

Next, get a large chopping board and sprinkle the remaining coconut onto the board. Take a large heaped tablespoon of the mixture and scrap it onto a the chopping board. With your hands gently roll the mixture in circles until it turns into a ball shape.

Once you have your ball shaped Brownies push a lollipop stick through the middle of each one. Place the Brownie Pops in the fridge for an hour to set. Let them Enjoy.
