Healthier Morning Pancakes

Seriously, a recipe that looks great (especially when you add the strawberry protein powder and berries on top). This high protein pancake recipe is a delight to wake up to in the morning and will keep you full right up until lunch. Add strawberries, cherries and raspberries for extra taste, or even a little honey or greek yogurt.
1.)50g self-raising flour
2.) 50g wholemeal flour
3.) 2 small eggs, separated
4.) 200 ml skimmed milk
4.) Berries to serve
5.) Low-fat yogurt to serve
6.) Scoop of strawberries
7.) Scoop of whey protein powder
Mix the flours, the egg yolks and a splash of milk. Stir to a thick paste.
Add the remaining milk a little at a time so you don't get lumps.
Whisk the egg whites until they stand up in stiff peaks and then fold carefully into the batter.
Heat a non-stick pan over a medium heat and pour enough batter to make a pancake about 10 cm across.
Cook for just under a minute until bubbles begin to pop on the surface and the edges look dry.
Carefully turn the pancake over and serve with your favourite healthy toppings such as lemon, natural yogurt or berries.
