Energising Carrot & Parsnip Soup

An energising, refreshing and light soup for a great boost of Vitamin A. Carrots contain vitamin A, antioxidants, and other nutrients. Evidence suggests that eating more antioxidant-rich fruits and vegetables, such as carrots, can help reduce the risks of cancer and cardiovascular disease. Carrots are also rich in vitamins, minerals, and fiber.

Ingredients

  • 100g carrots (chopped)
  • 100g parsnips (chopped)
  • 1 shallots (chopped)
  • 1 fresh chervil sprigs
  • 200ml water
  • fresh parsley pinch full (chopped)
  • basic vegetable stock(organic is possible)
  • Sea salt and black pepper

Method

1.) Put the carrots, parsnips, shallots and chervil into a saucepan, pour in the stock and season with parsley and pepper.

2.) Cook at a low heat for 20-25 minutes, until the vegetables are tender enough to enjoy but still crunchy enough to still have the nutrients.

3.) Remove the pan from the heat and leave to cool slightly.

4.) Remove and discard the chervil, then transfer to a food processor blender, in batches if necessary, and process to a purée.

5.) Return the soup to the rinsed-out pan and reheat gently.

6.) Ladle into warm bowls.
